Good Mornin’!

While Monday was filled with home cooked eats, yesterday was filled with leftovers and eating out. It’s always nice not to have to cook every once in a while, right?

After breakfast my body was feeling really tight so I did 30 minutes of Hip Opening Flow on Yoga Download. I haven’t done yoga in at  least two weeks and my body can really feel it! It’s amazing how quickly you can lose your flexibility. I felt like I hadn’t done yoga for a few months.

Yoga warmed up my body for a 3 mile trail walk with some friends and pups. I think I am going to take it easy with running this summer and then get back into the swing of things (more intervals, longer distances come fall). Between my IT bands and my knees my body just needs some time to be pain free.

Even though I was so excited for leftover fish tacos for lunch, but the time lunch rolled around I was more in the mood for leftover salad and chicken.

So I made a wrap.IMG_4911In addition to the salad from Monday night and grilled chicken I added avocado and salsa.IMG_4914 It hit the spot!

On the side I had a handful of Food Should Taste Good chips.

Once my belly was filled to the brim our friends dragged us to the pool. Despite the fact that we should be going through all the junk we’ve accumulated and packing, we didn’t want to let down our friends and joined them :) Hehe

So today we really need to buckle down and start getting things done!

For dinner last night we met some friends at Acme in Carrboro, which is just past Chapel Hill. I had never been there before and was excited to try something new!

Chris and I split the fried green tomato and fresh mozzarella napoleon with tomato confit, and sweet corn in a balsamic reduction.IMG_4533 I was pretty impressed with this dish, and even used a huge piece of bread to wipe up the balsamic vinegar.

For my entree I ordered the Blackened Salmon With Green Tomato Salsa Over Cheese Grits, and a Sautee of Black Beans.IMG_4534 When our waiter first put this dish in front of me, we all looked at each other thinking the same thing.

That doesn’t look like salmon?!IMG_4535 It was very white on the inside. If you can tell. There was barely any pink or salmon color.

But after a few bites I realized that it definitely was salmon.

Weird.

Do they have different colored salmon?

This dish wasn’t my favorite. I really enjoyed the cheese grits and beans, but only had a few bites of salmon.

Also, our waiter was a bit of a doof. He was not on top of things and made it seem like splitting checks was the biggest inconvenience in the world.

Rather than get dessert at the restaurant we decided to walk across the street to Maple View Ice Cream.IMG_4536 I’ve heard really good things about this place and have been dying to go here!IMG_4539I got one scoop of cookies and cream ice cream.

The verdict? Not impressed.

Don’t get me wrong, it was tasty enough and I ate every bite (lick?), but we all agreed that the ice cream wasn’t creamy enough and tasted gritty.

I had high expectations and they definitely weren’t met.

Oh well, you win some you lost some!

Breakfast this morning consisted of a berry smoothie with spinach.IMG_4784 And an English Muffin.IMG_4788 Half with White Chocolate Wonderful PB (still didn’t enjoy it) and half with real butta.

Time to take Nylah to get her shots! Fun, fun.
