Happy Friday!
After plenty of rest and nasal spray yesterday, I am feeling much better. Thank you for asking :)
So, my husband is a genius. He may forget to heat a pan before he puts chicken in it, and he may not always remember that bread only takes a few minutes to brown when it’s under the broiler, but man oh man, he sure came up with a clever way to cook veggie burgers.
In the toaster!
And not a toaster oven, and regular ol’ pop up toaster.
One day last week when I was unable to come home for lunch, Chris made himself a veggie burger. When I got home from work he was so excited to tell me that he popped the burger in the toaster and didn’t have to clean any dishes.
It’s always about the dishes. He hates washing them and complains when I use too many (right hon??).
So last night I didn’t feel up to spending a lot of time making dinner, so we had toasted Morningstar Black Bean veggie burgers.
Which took all of two minutes! Why have I never thought of putting a veggie burger in the toaster before?
I had mine on a tomato bun.
With a splash of Frank’s under the top tomato.
Our veggie burgers were accompanied by a big salad.
With:
- Boston/Butter/Bib lettuce
- Spinach
- Carrots
- Radishes
- Avocado
The best part?
I made herbed biscuit croutons to go on top!
Remember the biscuits we received with our Family Dinners last month? Well I still one left in the freezer so I defrosted it and decided to use it as a salad topping.
I melted one 1 tbsp of butter.
And then added the chopped biscuit.
I browned it for about 3 minutes over medium high heat.
So much better than plain bread croutons!
They were crunchy, and buttery and oh so good.
Of course I also added feta to my salad. Some day I am going to get Chris to like feta!
Some day.
For dressing I mixed together olive oil, balsamic vinaigrette, Dijon, S & P, garlic powder, and a pinch of sugar.
It was a lovely salad.
TIPS – If you are looking for a lighter version (aka less calories) skip the croutons and/or cheese. I think both made the salad much more delicious though :)
OR
Add chicken or shrimp for more protein!

This morning I tried another Kellogg’s All- Bran sample I received.
Wheat flakes!
I did not receive these samples because the company contacted me to do a review, I signed up on their website to receive them. Just an FYI :)
This morning I added strawberries and blackberries to my Wheat Flakes.
Big surprise!
With local milk.
While I did enjoy the flakes, I definitely prefer my standard Nature’s Path Flax Plus. It’s more crunchy and I love how you can taste the nuttiness from the flax.
Since the sample pack of cereal was small, I also had 1/2 of a sandwich thin with peanut butter.
I’m all out of almond butter!
I should really make a trip to Fresh Market so I can get some Barney Butter :)

You MUST make your own nut butter immediately! It is SO easy and it tastes better than anything you can buy :)
I love almond butter with a hint of maple syrup or honey…

I love those black bean burgers! My sorority house actually serves them on “grill nights”, so I always have to stock up and save some for the next following days! They are amazingg with hummus and tomato slices, in my opinion :) And they’re spicy–which I know is a plus for us!
Oh and feta definitely makes it betta! You gotta get Chris to try some–he’ll learn to love it! haha!
I love homemade nut butter! I have made almond, pistachio, and peanut butter – so good!

ha! I put my veggie burgers in the toaster like bread at work! People always wonder what I am doing…
I just think that’s the most brillian idea! Everyone should toast their veggie burgers.
So…I got some free veggie burgers with a coupon the other day, and I was wondering how to cook them, to get that ideal “burger” taste. I was thinking on the grill, but this toaster idea sounds pretty good!
Definitely toast them! When I cook then in a pan they actually tend to get a little greasy. They were nice and crisp out of the toaster though :)
i tried once to make my own almond butter but it ws a major fail because I took raw almonds and roasted them FIRST and ended up burning them!!! the trick is to buy them already pre roasted! i totally think you should make your own!!

I make my own nut butters too. I have made almond, cashew, and pecan butter. The pecan butter is the best!! It’s the easiest thing in the world to do. Good luck.
I’ve tried cooking veggie burgers in the toaster before–with mixed results. Sometimes they turn out really well…but other times they just crumble upon being heated, making for quite a mess. Glad yours turned out well!

I love using the toaster oven to heat up veggie burgers. It gets them nice a crispy on the outside. Frank’s Red Hot is a must on a black bean burger…that stuff is liquid gold! We always make our own croutons too. My kids love them as a side dish too! I am definitely a make your own nut butter kind of gal. I love making sunflower seed butter and pecan butter! Pecan butter tastes like pecan pie without all the goo! It is fun adding flavors too!
I have some veggie burgers (purchased with Ally! comment above) in my freezer and I was just wondering if I could put them in the toaster. Love it!
Black bean burgers in the toaster is one of my go-to things for lunch at work. Along with a whole-wheat tortilla and some avocado and hot sauce (of course!), it’s so quick.
