So remember my 7-day no sandwich challenge that began last Monday and ended yesterday? Well…when Emily commented on my spinach, avocado and bacon wrap on Saturday I realized that I failed the challenge! Whoops. I totally wasn’t even thinking when we went out for lunch. DUH. I was ONE DAY AWAY from successfully completing the challenge! Oh well, at least when I made my lunch at home I didn’t slip up? Hopefully you guys aren’t too disappointed in me!
Since I screwed up on Saturday, I purposely did not have a sandwich for lunch today :) Instead I had a salad with leftover chicken and some leftover spicy black-bean cakes.

I only used 1/2 of the leftover chicken breast.

Which was the perfect amount.

Also in there was:
- Red pepper
- Tomato (fresh from the vine)
- Cucumber
And for a dressing I splashed on a little (too much) evoo and balsamic vinegar.

Good stuff.
I also heated up the black-bean cakes in the oven on 350 for about 5 minutes.

And they were just a delicious as they were last night!
Especially with a dollop of yogurt dip on them. Not to be confused with a dollop of Daisy :)

The spicy black-beans cake will be sure to make another appearance! We still have a couple left :)

I think you still passed! A wrap and a sandwich are two different things :)
My favorite non-sandwich lunch is a flatbread pizza or salad with yogurt and fruit.
