Doesn’t the title of my post just make you want to read on?!
We have quite a few veggies in our house at the moment, thanks to Bella Bean. The only problem is, sometimes I have a hard time coming up with something to make! Especially when it comes to lunches.
I threw a bunch of things on top of spinach today, but it wasn’t really creative :)

On the spinach is:
- Carrots
- Radishes
- Chickpeas
- Feta
- 1 hard boiled egg
Of course I had to creat a pool of tobasco with my egg!

My favorite part of the salad?

Feta! Mmmm…so good….
And I used my new handy dandy Misto to spray on some olive oil!

I also drizzled on some balsamic vinegar.
I was in the mood for some carbs, so I had a whole wheat bagel on the side.

Only I wasn’t in the mood for peanut butter, oddly enough, I was in the mood for butter. Sometimes I just need warm, melted butter..mmmmm…. So half of the bagel has butter and half has peach jalapeno jelly.
And that, my friends, was lunch!
Oh, and I had a pumpkin dessert square! I figured I was doing myself a favor by eating one thus leaving less of them to tempt me :) AND I had some grapes for a snack.
I am going to give running another go in about a half an hour. Thankfully the rain has stopped!
And thankfully I don’t have to work tomorrow! I’m so excited! Charleston here I come!

Warm buttery cinnamon raisin bagels are my favorite; I always do one side with butter and one with cream cheese because I’m bad at choosing!
I love bagels & cream cheese! If I had cream cheese, that definitely would have gone on there.
yay for vacation!
