I already racked my brain enough today trying to figure out what pottery piece I was going to paint, what I was going to paint on it, and what colors I was going to use, so there was no room left to come up with a title. I’m sure you’re not that devastated, right? :)
So last night was a relaxing evening that consisted of dinner and a movie with my friends Jen & Kate.
Dinner was Drunken Noodles from Thai Cafe.

With a few squirts of sriracha – clearly. It was added after the picture though.
And the movie was Ghosts of Girlfriends Past. Have you seen it?
Then I enjoyed a nice big, cozy bed to myself. Oh wait….no…I had a dog who snores louder than a dump truck spooning me. Good thing she’s cute!
And good thing I didn’t have to get up for anything in particular this morning and could sleep in.
I motivated to workout this morning because I wasn’t sure how many days of exercise I would get in this week. After snacking on a piece of toast with almond butter, I hit up the gym and did intervals for 35 minutes on the elliptical and did some strength training.
My intervals went like this:
- 2 minutes slow, 2 minutes fast (thanks to Gina’s recommendation!)
- Increase level by 1 every 5 minutes – beginning at level 5
My strength training consisted of:
- 3 sets of 12 bicep curls – 1olb weights
- 3 sets of 12 overhead press – 10 lb weights
- 3 sets of 12 tricep pull down – 20 lbs on weight machine
- 3 sets of 12 lat pull down – 40 lbs on weight machine
I made it a point to follow one of the tips on how to increase your metabolism and counted to three as I lowered my weights. My arms could definitely feel the burn!
My second breakfast was on the lighter side because I knew I had pizza coming my way for lunch.
A 2nd piece of toast with strawberry jelly.
Lunch was pizza that was eaten at Paint Your Pot, a paint your own pottery joint. As soon as I tried to take a picture there I realized I had left my memory card in my computer! What a num-nut. It was bound to happen sooner or later I guess!
So let’s just skip lunch and head right on over to dinner shall we?
Because of the massive amount of Thai food I ate last night and the pizza today, I decided to keep dinner on the lighter side.
I cooked up some chicken.
And it added to a salad.
In the mix was:
- Spinach
- Radish
- Carrots
- Red pepper
- Avocado
- Feta
It’s a little messy looking because I put Saran Wrap on top of the bowl and tossed the salad around.
I wanted to evenly coat it with the dressing, which was a balsamic vinaigrette that I picked up from Target today.
I didn’t realize it was light until I got home! It was ok, but I definitely prefer to make my own salad dressing.
I wanted some bread on the side, so I toasted up some flax bran bread.’
I have a hard time eating salad without a side of bread!
Did I have dessert?
Yup – sure did!
2 small scoops – 1 vanilla, 1 pumpkin with Reece’s Pieces. Good.
What do you usually put on your side of bread? Butter? Olive oil? Nothing?
I use olive oil most often because of its heart healthy fats, but every once in a while I’ll crave butter :)

I got sort of olive oil-ed out after living in Spain–so I usually do butter, or just a little salt now… but I’m the same. I always need something carby on the side of salad!
I only have bread at restaurants so I usually just go with whatever is served with it. I’m a huge fan of olive oil so that’s what I’d ultimately prefer!
Whoa, that flax bran bread looks amazing! I’m not much of an oil or butter fan, so I usually stick with hummus or nothing!
That salad looks amazing! The bread looks like the perfect side. I haven’t been eating breads since I decided to try a gluten free diet, but I usually would eat it plain. I’m not a fan of butter and a HUGE fan of bread! I miss it.
wow all of your eats look delishhhh especially the ice cream I must say hahah… I generally put PB or AB on my toast… sometimes pumpkin butter. and if I am having it with pasta…I put nada because I am dipping in the red sauce ;)
Those paint-your-own-pottery places are so much fun :D I like butter on bread, or some kind of soft cheese like laughing cow. Though you really can’t beat warm bread with real butter…
My mom owns a paint your own pottery shop so every time I go visit she insists that I paint something. It’s so hard thinking of what to makes.
If restaurants offer whipped butter with bread I will add that otherwise I eat it plain.
I like Smart Start Canola or Land of Lakes Canola butter spread. I thought Ghosts of Girlfriends Past was so, so… there was nothing better to watch that night.
I can’t wait to see that movie- it looks like it would be cute!

Fresh bread almost always gets butter! And then day-old toasted bread gets dipped in olive oil. I love both. I have a spice jar with 4 different spice mixes that you can sprinkle in olive oil… so you can have garlic parmesan or sundried tomato, etc. It’s fun when you want to add some extra flavor! Your salad looks gorgeous… and I know all about the snoring dog thing!
