It has now been raining constantly for over 24 hours. Yuck. And it’s cold. But I actually think cold rainy nights are cozy! You can lounge on the couch wrapped up in a blanket with a cup of hot tea. Just like I’m doing now :)
The good thing is that it’s supposed to clear up this weekend! I just care about Sunday being nice for my race. I don’t really like running in the rain, ya know?
So lunch this afternoon was leftover chicken sausage. And let me just tell you that this is the best chicken sausage! Who knew that the Target brand would be so good?
I dressed it up with some feta and sriracha.
Normally I don’t get super excited about having leftovers for lunch, but I was excited about this chicken sausage! You should try it :)
I was also very excited about the next part of my meal.
Only to be extremely disappointed after I tasted it :(
I was psyched to pick up some pumpkin pie yogurt over the weekend and was thinking it would taste like the PP ice cream.
I was wrong.
While it looks tasty, I wasn’t a fan.
I thought if I topped the yogurt with Nature’s Path pumpkin granola it would help, but it didn’t.
Ah well… good to know I don’t like it!
Dinner tonight was whipped up in less than 1/2 an hour. I had some hairs that needed cutting tonight so I didn’t get home until 7:30 and was starving!
So I quickly boiled some angle hair pasta, and threw some frozen broccoli and squash in a pan with some olive oil and garlic.
I added some chopped onion and frozen shrimp (that I thawed under water) as well.
Then I tossed it all together with some Bertolli pesto.
And added some fresh parmesan cheese!
And some red pepper flakes!
And some S & P!
I don’t know why I’m getting so excited?
It was pretty darn good I guess.
I love quick and easy meals :)
I also love that tomorrow is Thursday which puts us very close to the weekend!
Off to continue to sip my peppermint tea….
I can’t wait to share what the WIIW photo is with ya’ll tomorrow. He he he…

Hahaha your excitement is cute! I get excited about my home made dins too. I haven’t tried the pp yogurt yet–where did you find it?! Sad you didn’t like it!
Great post Meg! I totally agree with the rain thing…I do love it to be able to curl up on the couch with a big hot mug of hot chocolate (yes, I’m like a little kid ;) ), a blanket, chocolate!! and watching campy reality TV (like this stupid ‘The City’ show…)…all of which I’m doing now! haha. Love your sandwich – I made homemade pizza tonight and can still taste it :( oye. too much.
Allie – I found the PP yogurt at Harris Teeter. I don’t know what it was… but it didn’t really taste like PP to me?
Jen – I watch The City too :) Reality TV is one of my guilty pleasures!

I absolutely get excited when I create something new that is quick and healthy. Most days, I just don’t have time to spend time in the kitchen, so I remember those meals that I can make in a hurry!

I always get excited about pasta ;) Looks great. I didn’t think the pumpkin pie yogurt was good either- kind of tasteless with a hint of carrot. Ick.
