I wanted to save the leftover curry for dinner tonight, so for lunch I picked up salads for Chris and I from Green Tango on my way home from work. Green Tango has fresh chopped salads and the costumer gets to choose the ingredients!

  • Romain lettuce
  • Roasted red peppers
  • Chickpeas
  • Grilled chicken
  • Avocado
  • Feta

IMG_5556You can’t really see anything but the roasted red pepper huh? Everything was buried underneath the lettuce!

See?

IMG_5557 Oh wait…no… aside from one clump of feta only the red peppers can be seen! Despite the hidden toppings, it was delicious!

I opted to make my own dressing at home and used balsamic vinegar, olive oil, Dijon mustard, S & P and a pinch of sugar.

On the side we were given a piece of rosemary bread.

IMG_5555Which was a little bland, but overall it was ok.

About an hour before I left work I had 3/4 of a Gatorade nutrition bar.

 IMG_4016 I knew I wanted to do some form of exercise at work and hate when I get home and am starving!

Even though I may not always show it, on days that I exercise I usually have a piece of fruit, nuts, or a granola bar of some sorts an hour before I leave work. Exercising on am empty stomach does not bode well for me. My body needs fuel!

So what did my workout consist of tonight?

So glad you asked! I was just getting to that!

Since it was pretty much dark when I got home, my options were pretty limited. Boo.

Chris was at the dog park with Nylah, so I decided to do a 10 minute jog around our apartment complex and ended at the dog park to jump rope. By that time it was dark so I was glad to have some company :) I got a lot of funny looks from the other dog owners, but oh well.

Here was my JR routine:

  • 30 second jump
  • 45 second jump
  • Then I realized it was really difficult to look at my watch whilst jump roping, so I decided to count jumps instead
  • 100 jumps X 4 (~ 50 seconds per 100)
  • 50 jumps really fast x 4 (~ 20 seconds per 50)

My heart rate was souring and I was sweating like Ben Stiller in Along Came Polly. Ok, maybe not that bad.

I really had a lot of fun though! My new goal is to jump rope once a week. Luckily I can do it at the bottom of our outdoor stairwell at night. Hopefully I won’t bother the neighbors :)

I cooled down with a 3 minute jog, then came home to do:

Since dinner was leftovers, it was ready in a snap! Which means we ate super early for us. I wonder if we’ll ever hit up the early bird specials when we’re old?

I heated up the leftover red lentil coconut curry in a sauce pan on medium-low for about ten minutes, and heated up the rice in the microwave for two minutes.

And voila! A twelve minute dinner!

While the curry was warming up, I toasted a whole-grain English Muffin.

We did rocks, paper, scissors for the last piece of naan and Chris won :(

I love my nooks and crannies though!

Dessert was holiday cookie bites!

Guys, I still have a carton and a half of pumpkin ice cream! What am I supposed to do with it?! It’s going to take us forever to eat it….

Maybe the fam will have some over Thanksgiving? :) Nothing like a little pumpkin pie ice cream on top of pumpkin pie, eh? I’m sure my Dad will eat at least a half a carton! Right Dad?
