Hiya!
Internet was down last night – boo. So I’ll catch you up on dinner, which will take all of about 3 seconds.
I had a meeting last night that fell during dinner, so I really didn’t have time to make anything. Instead, Chris picked me up from my meeting and we made our way to Green Tango.
And no, I’m not talking about a dance that saves the environment, I’m talking about salads!
I felt like I was really slacking in the greens department this week and a salad was much needed.
You can’t really see what’s in there so I’ll tell you:
- Mesclun mix
- Spinach
- Carrots
- White beans
- Mushrooms
- Avocado
- FETA
All the goodies got pulled to the bottom of the bowl after I added salad dressing (balsamic vinaigrette) and shook it around.
I had a tough time finishing this and Chris ended up eating the last few bites.
I did, however, have no problem saving room for a chocolate chip cookie. I ate it too fast to get a picture of it though. Oops.
Ok…so…that took a little longer than 3 seconds. My bad.
Oh, and I forgot that I was able to get a 4 mile run in during lunch yesterday. My starting speed was 6.8, and like Monday, I increased my speed by 0.1 after each song. Only this time I didn’t do a pyramid, I kept increasing my speed until I had reached four miles (end speed was 7.5).
I was happy that my legs weren’t too sore from P90X for a run! There were really sore though…don’t get me wrong.
Now breakfast!
As I was getting ready for work this morning, the scent of sauteed onions wafted through the air and made its way to the bedroom.
Hmmm… what could that smell be from?
Who was hard at work in the kitchen making scrambled eggs!
With onions and celery. Yes, celery. I thought it was odd too. I may have even said “you’re adding celery?????” In the end it was a grand choice though. Nice work hon.
He also added turkey breast and cheese.
If there’s one thing Chris can cook besides pancakes and waffles, it’s eggs. I’m not quite sure what he secret is.
They were fantastic! Especially with Tabasco on top.
Well done Chris, well done.
I toasted some flat bread for us to have on the side. That was my contribution :)
And sprayed some olive oil on it with the Marvelous Misto.
I brought some grapes with me as a morning snack. I have my office holiday party this afternoon but it’s not until 1pm and breakfast rarely holds me over for 5 hours.
Lunch will not be documented today because of said holiday party.
So who here besides me prefers eggs over pancakes or waffles?

hmm-depends on what mood i am in..i like eggs AND pancakes :)
Breakfast looks so yummy! I love both, but it depends on the day. We usually have panackes on the weekend.
I’m on the side of eggs! Especially when they are served in an egg sandwich with cheese and spinach!
I do like hearty pancakes though, like my favorite oatmeal/whole wheat recipe.
Agreed. Eggs sandwiches are the best!
I like eggs– I like how versatile they are, always good for using up veggies! My mom ate french toast everyday when she was pregnant with me and I love it, it just always makes me feel icky after all that sugar.
I actually really prefer pancakes. I like eggs WITH my pancakes though ;)

Depends on my mood, but I usually go for french toast over eggs for breakfast. For me eggs are a dinner food. ;)

wow chris is quite the egg chef! I prefer eggs over panackes and waffles too!
Pancakes! I always used to order eggs when we’d go out to bfast and apparently would always say that I’d wish I’d gotten french toast or something like that. Now, my friends force me to get the sweet item on the menu :)

love flatbread – such a great complement to dinners. that’s an awesome run – i tried your technique of changing around the speeds after a song/doing intervals and it makes the run so much faster!
Actually I do prefer eggs over easy with bacon, but here’s the bad side I also like a pastry to finish the meal. You do get some good looking salads. I do love salad, would prefer that as my vegetable.
I do I do!! There are definitely times when the pancakes or waffles sound better, but about 80% of the time I prefer the eggs. I think it’s the fact that heavy breakfats drag me down, and pancakes tend to be on the heavier side, you know? Now for dinner, that’s another story :)
I prefer eggs as well! I do like having waffles & pancakes every once in a while though! I love the picture of Chris cutting the onions!
