At my office holiday party! It was Hawaiian themed of course :)
I shared my lei with Nylah. She loved it.
So the food at the party was as expected. So-so.
Appetizers included coconut shrimp (cold and pretty tasteless) and chicken skewers (also cold and tasteless).
There were also various hummus dips with pita and crackers so I had a fair amount of that.
The lunch menu was roasted chicken, pulled pork, roasted squash & mushroom, rice, and sweet potatoes.
I had a little bit of everything with the exception of the sweet potatoes because I knew they were on the menu for dinner tonight.
The best part about the party? We played Jeopardy! And guess who won? My table!
The prizes.
I already have the coffee mug, so that wasn’t very exciting, but the Kona coffee was! Now we just need to get a coffee grinder so we can grind the beans :)
The holiday party brought back memories from our trip to Kauai before we moved to Durham. Ahhhh……

Dinner tonight was D. Licious!
We have a ridiculous amount of sweet potatoes and onions at the moment, so I knew they were definitely on the menu.
I decided to cube both of them, spray them with olive oil and sprinkle them with:
- S & P
- Paprika
- Cumin
Then I roasted them in the oven at 350 for 40 minutes.
I also roasted brussel sprouts so I could include some greens.
I also sprayed them with olive oil, added a drizzle of white wine vinegar and sprinkled on S & P.

The protein on the menu was shrimp.
Spicy garlic and lime shrimp to be exact.
The last time I made this was summertime!
It’s just a good sautéed as it is grilled. SO GOOD.
The brussel sprouts were beautifully roasted and I squeezed lemon juice on them once they came out of the oven.
And you can’t ever go wrong with sweet potatoes and onion!
Dessert?
A chocolate chip cookie minus the chocolate chips.
Yes, I know. I am a weirdo. I prefer the cookie without the chocolate chips. So sue me.
I did have one with chocolate chips though!

I’ve never had a chocolate chip cookies sans the chips. I bet I would like it best though. I’m not a huge chocolate lover.

I had a similar dinner tonight but I had eggs and turkey bacon instead of shrimp. I LOVE sweet potatoes :)
