Wow, today is a completely different day than yesterday. It is sunny and warm! The snow is beginning to melt, but it is supposed to be freezing tonight which could make for an interesting commute to work. Late arrival perhaps?!
We took some time yesterday to enjoy the snow and introduce Nylah to it.
She wasn’t quite sure what to do in it. Sniff it? Eat it?
Until other doggies arrived!
She got a good romp around session in and was pretty pooped afterwards.
Dinner last night was 30 minute shrimp quesadillas.
First things first, make guacamole!
This seriously took maybe 5 minutes to make. I took one small avocado, mashed it up with a fork, added diced tomato, a dash of S&P and lemon juice.
It wasn’t as tasty as last time since we didn’t have onions, but it did the trick.
I used jumbo frozen shrimp from Trader Joe’s for the quesadillas.![]()
After they were thawed under water, I added them to a heated saucepan with olive oil, garlic powder, oregano, red pepper flakes, and S&P.
They smelled delicious!
Once the shrimp were ready, we began assembling the quesadillas.
Layer 1 – cheese
Layer 2 – shrimp
Layer 3 - jalapenos
Layer 4 – banana peppers
Layer 5 – spinach (I’ve been missing out on veggies lately!)
Layer 6 – more cheese!
Flip for a few minutes.
And serve!
Mmmm…nice and crispy.
Lots of shrimp.
Quick & easy.
Dessert was a bowl of vanilla ice cream with Reece’s Pieces. I was too tired to take a photo :)
After a nice long night of rest, Chris whipped up some panwaffles this morning.
And I had four varieties!
Vanilla Oikos & cinnamon.
Vanilla Oikos and pineapple.
Almond butter & hot pepper jelly.
And almond butter & banana with a dash of cinnamon.
So many different flavors and so delicious!
I had for lunch what I really wanted for breakfast.
Eggs :)
With peppered ham & cheese.
On a sandwich thin.
1/2 of which had ketchup and Tabasco.
Plus and orange for some fruit.
Hit the spot.
Chris tends to make fun of me when I eat my eggs with ketchup, but I love it!
Does anyone else like ketchup with their eggs?
Phew! That was long post. Three meals in one is a lot! Now I’m sleepy and need a nap I think :)





I’m hoping Duke continues the severe weather policy and I can work from home tomorrow – our roads are a mess.
Those shrimp quesadillas look delicious! I recently discovered shrimp fajitas and I looved it! :)

I dont think that I could eat my eggs without ketchup… I was raised with putting ketchup on my eggs and I have always loved it!!

My husband cannot eat eggs with ketchup…I on the other hand, am not that into it. And that is coming from a “ketchup LOVER” where I eat it on almost everything else!
Awwww Nylah is aborable! I love playing with my pup in the snow. I will have to post a picture of her from last week’s snow storm on my blog (because I totally forgot until now!).
Your eats look fantastic. Do you use cooked frozen shrimp? I always come across recipes that call for raw shrimp but always end up buying cooked because it’s so much easier.

Oh I looove ketchup with scrambled eggs! Especially if you make scrambled eggs with onion mixed in… oh yum!

Nylah is so cute in the snow! I love forcing Miles to play outside. He hops around and has a great time. Then passes out!

I love the variety of panwaffles you had this morning. I need to get myself one of those pans…they always look so good!! I never used to put ketchup on my eggs but now I do if I am eating an egg sandwich or omelette!
