I feel like we have so much to do with so little time! I have never really been one to stress much though. It will all work out :) It always does, right?
We made a pretty good dent in packing yesterday and realized that we actually don’t have that much “stuff.” I guess when you live in apartments no larger than 600 square feet for several years it’s kind of hard to accumulate a lot of things.
So remember those delicious spices I purchased in St. John a few weeks ago? Well I finally was able to use one last night!
Island BBQ is a blend of red chilies, paprika, black pepper, hickory flavors, nutmeg and cumin. Mmmmm…..
We rubbed it on some chicken and threw it on the grill.
In addition to the chicken we grilled slices of eggplant.
Which were sprayed with olive oil and sprinkled with salt, pepper, and garlic powder.
Oooooh….nice and crispy.
While Chris manned the grill I manned the oven where sweet potato fries were baking.
I tossed them in olive oil, salt, pepper, and paprika and then baked them at 425 for 30 minutes.
Nice and balanced.
Just how I like it.
I really enjoyed the Island BBQ spice and actually preferred it over regular BBQ sauce which can sometimes be a bit too sweet for me.
Can’t wait to try the other two spices!

My workout yesterday consisted of a ~23 minute swim:
- 12 laps freestyle
- 12 laps breaststroke
- 1 lap kick, 1 lap pull (repeat 5 times)
- 5 laps freestyle
- 5 laps breaststroke
- 5 laps freestyle
I didn’t want to push my body too hard since it went through so much on Monday!

This morning started off wonderfully with a delicious smoothie.
In the mix was:
- Frozen strawberries
- Frozen blackberries
- Frozen raspberries
- Frozen blueberries
- Frozen pineapple
- Spinach
- Flax
- Milk
Time to go take Nylah for a 3 mile trail walk. Which will most likely be my exercise for the day as well.
