Happy Monday! Sorry for my late post. I am going to be a busy little bee this week so blogging will be a bit sporadic. I do have two special posts planned for you though! So at least you have something to look forward to.
Here is a recap of today’s eats.
Breakfast this morning was cereal!
Ok, so cereal isn’t really all that exciting.
Nature’s Path Flax Plus.
With golden raisins and Craisins.
And a spoonful of Mara Natha almond butter.
I feel as if I have been slacking on my fruit intake lately, so I also had a kiwi.
Kiwi fruit is rich in Vitamin C.
It’s actually packed with more vitamin C than an equivalent amount of orange!
While the skin of Kiwi is completely edible, I always peel it off first. I don’t like the little brown hairs.
Do you leave the skin on when you eat kiwi?

Lunch was pulled together after scrounging around in the fridge for a bit.
Scrambled eggs in a Flat Out wrap.
I used two eggs and one egg white.
And threw in some red peppers, scallions, spinach, cheese and salsa.
‘Twas quite the belly filler!
My afternoon snack consisted of an orange and a handful of peanut M & M’s.
Guess I got my fill of Vitamin C today!

I fully intended on doing a half hour of Hip Opening Flow this evening as well as some leg strengthening exercises, but I have had a massive sinus headache since I walked through the door. So instead I called today a rest day :) We all need them!
Dinner tonight was quick and easy with no fuss.
Alfresco jalapeno chicken sausage with sautéed onions.
Melted pepper jack cheese.
Mustard and jalapenos.
On a whole wheat Kaiser roll.
On the side was baby broccoli florets.
Which I microwaved (they were frozen) and added to the pan the sausages were on to get them brown. I also sprinkled on S & P and garlic powder.
And just in case I didn’t get enough veggies today, I had a small side salad :)
With spinach, carrots, red peppers, and feta.
I made a homemade balsamic vinaigrette with contained olive oil, balsamic vinegar, dijon mustard, S&P, garlic powder and just a pinch of sugar.
And even though I thought I didn’t want dessert, after I saw Chris with a bowl of ice cream I couldn’t help but have four small spoonfuls of Ben & Jerry’s cookie dough :)
Is it Friday yet? Because I am going to be one happy camper once Friday afternoon hits. Yes siree Bob.
Oh, and Chris and I have something fun to celebrate on Wednesday!
